Rice noodles boast a very long history. The most typical rice noodles are "GwayTeow" from Guangzhou. As a popular rice-made product, GwayTeow originated from Shahe Town, Guangzhou. Authentic GwayTeow is made from rice, which is soaked in Jiulong Spring in Baiyun Mountain and steamed. These noodles are white and smooth. They could be fried or stir-fried, eaten as rice noodle soup, or a cold dish dressed with sauce. Some restaurants also add various fruit or vegetable juices in the rice noodles to enrich colors and improve tastes.
