The essence of Hokkien mee is a strong perfumed soup stewed from shrimp heads, shrimp shells, and pig bones. Add fresh and sweet shrimp soup onto the boiled yellow noodles, rice noodles, bean sprouts, and water spinach (or ong choy in Cantonese), decorate it with a few pieces of lean meat, water-boiled eggs, tiny shrimps, and finally add a few fried sliced scallions onto it. Now a bowl of Hokkien mee is ready. In average conditions, small vendors will prepare fried chili sauce. Those who favor chili can add chili to their Hokkien mee according to their own preference.
