As the folk saying goes "Every household washes a pig head on the 29th of December", Tujia people would cook a pig’s head for the Spring Festival. On the December 29, they will take the preserved pork head from the beam to de-dust, depilate and wash many times with water, in order to cook the evening’s meal. "One pork head can be made into a few bowls of dishes." It means that the pigs head meat, including tongue, ears, mouth, face, etc., is a necessity prepared for Spring Festival.
