Shredded dried tofu is a typical Huaiyang dish. Perfection of the dish greatly depends on how the food is prepared and the precise temperature used to cook the tofu.
Preparation work involves slicing blocks of dried tofu into fine strips, which are then cooked in a chicken soup along with shredded chicken, bamboo shoots and several other ingredients.
The dish also requires a combination of low and high heat while cooking to ensure the flavors are fully absorbed into the soup.
Cooked shrimp, ham and pea sprouts are often added before serving.
