The Bacon and Horse IntestinesBacon is a traditional meat dish with the typical characteristics of the ethnic group of Kazakhs. It is highly nutritious.
In winter, the herdsman of the ethnic group will pick some plump and sturdy oxen, horses and sheep. They then kill them and process them into bacon.
The horse intestines come from selected horses. The intestines are washed, and the rib of the mutton is sliced into bars. The intestines are then filled with the ribs mixed with salt and ground pepper. The ends of the intestines are tightened with tendons before being hung to dry in the house.
