Altay Roasted Buns

There are mainly three kinds of roasted stuffed buns that are popular in Altay.

The first one is called "Samut Sa" in the Uygur language. The skin of the bun is made from unleavened flour and should be very thin. Instead of being round, the buns in Altay are often shaped like cubes. The stuffing should be mutton, onion, cumin powder, ground pepper and salt. The bun would be ready to eat after 10 minutes of roasting. The roasted buns are golden in color and tender in taste.

Another kind of roasted bun is called knotted roasted stuffed bun. The skin of this kind of bun is made from flour that has been leavened. The stuffing can be either mutton or beef. The other ingredients of the stuffing are the same as other kinds of roasted buns. This kind of bun is usually round in shape and rich with stuffing.

The third roasted bun is called “Sambre”, which basically has the same ingredients. What makes the bun different is that all the ingredients of the stuffing should be first fried in the pan before being used. This delicious bun usually takes a shape similar to dumplings. Apart from catering to guests at dinners, locals also use it as gifts during weddings. The bun tops all kinds of local buns in terms of taste.
