Altay roast lamb is a famous dish both in and outside of China. It is seen at all formal gatherings of locals. The selection of ingredients is very strict, and the cooking method is special.
The whole lamb is usually premium fat-tailed sheep brought up in Altay. After being washed and cleaned, the whole lamb is skewered through a stick then painted with a mixture of ingredients including yolk, salt water, yams, cumin powder and flour.
After being roasted for an hour or so, the whole lamb is ready to eat. In formal dinners, the lamb is usually placed in a specially made dining cart.
