Sapporo ramen is a local delicacy that also represents Japan. This dish traditionally uses a miso-based soup with medium-width curly noodles and is eaten with bean sprouts and onions. The reason why people associate Sapporo with miso is because Sapporo is the birthplace of miso ramen. The miso ramen was born out of a collaboration between Morito Omiya, the founder of the restaurant "Aji no Sanpei", who created the miso-based soup and Takayuki Nishimura, the founder of Nishimura Seimen Inc., who came up with the smooth noodles in 1958.
