This popular local dish is made with lamb or mutton which is cooked on an iron pan raised in the middle. Lamb and mutton are always a part of a Hokkaido barbecue. The basic style entails putting bean sprouts and onions on a heated pan coated with oil, then layering the meat on top. Lamb or mutton are eaten in one of three styles; raw, flavored with sauce or thinly cut while frozen and rolled. People began eating lamb and mutton when the government started using sheep’s wool for the military. This dish became a favorite local menu when the special barbecue sauce made by "Matsuo Genghis Khan" which opened in 1956 gained popularity.
