Sapporo ramen is a kind of typical local delicacy that represents Japan. This dish adopts a miso-based soup with medium-width curly noodles, and it’s eaten with bean sprouts and onions, which is the traditional standard of ramen. The reason why people associate Sapporo with miso is because Sapporo is the birthplace of miso ramen. The miso ramen came from a collaboration of Morito Omiya, the founder of the restaurant “Aji no Sanpei”, who created the miso-based soup and Takayuki Nishimura, the founder of Nishimura Seimen Inc., who developed the smooth noodles in 1958.
