A favorite dish of Tujia people. It’s known as a must-have dish for New Year according to the folk songs of Tujia people. The making of Hezha is simple, but it’s a bit hard at the beginning stage of "grinding". Therefore, Tujia people regard the making of Hezha as "grinding Hezha"–soak soybeans in water, then put in a stone mill to produce soybean milk, and finally pour soybean milk into a pot to boil, together with shredded vegetables. Thus, "grinding Hezha" is much easier than making tofu, no wonder Tujia people also call it "lazy tofu". The best way to serve Hezha is mixing it with rice, and it’s tastier than sauerkraut.
