Fried Shrimp with Longjing Tea is made of the large live river shrimp and accompanied by the fresh Longjin Tea around April 5 (Tomb-sweeping Day). The shrimp meat is white and tender, while the tea has a vivid color and fragrant scent with elegant luster and unique taste; it’s a famous dish that is most distinctly a traditional flavor in Hangzhou. There is a saying that Su Dongpo was transferred to Mizhou (now is Zhucheng in Shandong), and he wrote a well-known poem Wang Jiangnan in which referred to the fresh tea. And people thought about the fresh shrimp in the season from the poem, and then they cooked the Fried Shrimps with Longjing Tea.
