Steamed Chicken

The chicken is steamed for hours in a Jianshui-made pottery boiler before the vapor cools down and becomes broth. Locals prefer to make this dish with pseudo-ginseng (Sanqi in Chinese), a valuable herb in traditional Chinese medicine. Steamed chicken with ginseng is available in most Kunming restaurants and other parts of Yunnan province.
