Though Guangzhou people do not often eat cooked wheaten food, they show special preference to wonton noodles. A bowl of good wonton noodles shall be provided with three factors: first, bamboo noodles; second, fresh peeled shrimp and pork as the stuffing; here, the proportion of fat meat and lean meat shall be 20% to 70% and the meat flavor shall be blocked with egg yolk; third, the thick soup is stewed by flounder and pig bones together and then added with shrimp, so that such soup is thick but not oily.
